Applepear Muffins

Applepear Muffins


1 cup-----Applepear, peeled and diced--250 mL
1/3 cup--Applesauce, any flavour-------80 mL
¾ cup----Milk, skim or 1%-------------190 mL
1 ½ tsp---Baking powder------------------7 ½ mL
1/3 cup---White sugar---------------------80 mL
1 ¾ cup--All-purpose flour--------------440 mL
¼ tsp----Ground ginger------------------1 ¼ mL
½ tsp----Ground cinnamon--------------2 ½ mL

Instructions
1. Mix together the sugar, cinnamon, and ginger.
2. In a large bowl, mix flour, baking powder, sugar mixture, salt,
milk, and applesauce. Do not over-beat, as the muffins will get
tunnels from the air pockets.
3. Stir in the diced applepears.
4. Spoon the batter into 12 greased muffin cups.
5. Bake at 400°F (205°C) for 20-25 minutes, or until tops begin to spring back when lightly touched.
6. Serve after muffins have cooled down – it takes about 30
minutes.
